The Ingredient Problems Nobody Talks About
Seed Oils in Protein Bars
Sunflower oil shows up in bars that otherwise look clean — RXBARs, some Quest variants, a handful of "paleo" options. It's cheap, shelf-stable, and has no flavor, which makes it useful for texture. It also has an omega-6 to omega-3 ratio that nutrition researchers have increasingly scrutinized.
The cleanest bars use fats from whole foods: nuts, coconut, or — in Genesee's case — grass-fed bison tallow. Sugar Alcohols and the GI Problem

Quest bars use sucralose or erythritol depending on the flavor. Clif bars are effectively a candy bar with a protein upgrade — high glycemic, seed-oil-adjacent ingredients. Kind bars are one of the cleaner mainstream options but still use sunflower oil in several SKUs and are low in protein relative to calories.
Verdict: Fail on at least two of the four criteria above.
"Paleo" and "Keto" Bars
This category is more hit-or-miss than its marketing suggests. Some paleo bars (RXBAR, Larabar) have legitimately short ingredient lists. But RXBAR added sunflower oil to certain flavors, and Larabar is more of a date-and-nut snack than a protein bar — you're getting 4-5g of protein and a significant sugar load.
Keto bars often swap sugar for erythritol or allulose and load up on MCT oil powder, which is a fractionated coconut derivative — not technically a whole food.
Verdict: Better than mainstream, but most still fail criteria 1 or 2.

Step 1 — Scan the fat source. Does it say sunflower oil, canola oil, or "vegetable oil"? Put it back.
Step 2 — Scan for -ol endings. Erythritol, maltitol, sorbitol, xylitol. Any of those mean sugar alcohols are in the formula.
Step 3 — Count the ingredients you recognize. If you can't identify more than half the ingredients as actual foods, the bar is more processed than it's letting on.

Healthy is contextual. A bar that's healthy for a 200-pound former wrestler in a caloric deficit is different from what works for someone managing blood sugar.
But there are near-universals:
- Satiety matters. A bar that leaves you hungry in 45 minutes failed. Bars with whole-food fats tend to hold you longer than bars leaning on fiber-heavy sweetener bulking agents.
- Digestive tolerance matters. If your stomach protests, the bar isn't working for you regardless of its macros.
- Ingredient quality matters at scale. If you're eating a protein bar most days, the cumulative exposure to seed oils or synthetic sweeteners adds up in a way it wouldn't from an occasional treat.
