Grass-fed beef tallow specifically tends to have a more favorable fatty acid profile than conventional tallow, with higher concentrations of conjugated linoleic acid (CLA) and a better omega-6 to omega-3 ratio — though tallow is not a primary omega-3 source by any stretch. This is where the chemistry gets practical. Saturated fats are stable at high heat. The omega-3 content it's sometimes credited with (as ALA) is largely degraded in that process. What you're left with is a refined, oxidation-prone fat with a long industrial supply chain behind it.
Tallow doesn't require any of that. The comparison isn't really close when you look at it from a processing standpoint.
