The Grass-Fed Spectrum

Grass-fed is a term applied to animals fed a diet primarily of grass. The USDA has a voluntary grass-fed marketing claim standard that has been inconsistently enforced. Grass-finished is more specific — it means the animal was on grass for its entire life, not just a portion of it. Many grass-fed animals are grain-finished, which substantially changes their nutritional profile.

What Finishing Diet Changes

The fat in ruminant animals reflects their diet. Grass-finished cattle and bison have significantly higher CLA content, a better omega-6 to omega-3 ratio, and higher levels of fat-soluble vitamins than grain-finished animals. Grain finishing increases the omega-6 content and reverses much of the nutritional advantage of initial grass feeding.

Grass-Fed Bison vs. Grass-Fed Beef

Bison in North America are nearly universally grass-finished — the infrastructure for bison feedlots exists but is far less common than in the beef industry. This makes the grass-fed bison claim more reliable than the same claim for beef, where grain finishing is standard practice despite early grass feeding.

The Protein Bar Application

Most protein bars use whey protein from conventionally raised dairy cows. A grass-fed protein bar must use either whey from verified grass-fed dairy operations or a whole-food protein source from a grass-finished animal. Whole-food sources like bison and beef are easier to trace than dairy-derived protein isolates.
