Paleo eating eliminates grains, legumes, dairy, refined sugars, and processed seed oils in favor of meat, fish, eggs, vegetables, fruits, nuts, and seeds. The argument is evolutionary: our metabolic machinery is better adapted to these foods than to agricultural and industrial food products.
The paleo certification market has loosened considerably. Bars containing tapioca syrup, rice protein, and agave nectar carry paleo certifications because there is no single regulatory standard. None of these ingredients appeared in pre-agricultural human diets in their processed forms.
The ingredient list should be readable without a chemistry background. Meat-based protein ideally from a whole-food source, nuts and seeds, fruit-based sweeteners used sparingly, and no industrial seed oils. Dates, honey, and maple syrup are borderline — they are unprocessed but still concentrated sugars. Most strict paleo practitioners accept them in modest amounts.
Bison is arguably the most paleo-aligned protein bar base available commercially. Bison roamed North America in enormous numbers before European settlement — it was the primary protein source for the Plains peoples. Bison tallow as a fat source is equally paleo-coherent, far more so than coconut oil, which was not available to most North American populations.
