Why this works

The 3pm crash is mostly a blood-sugar problem with a real-food solution. These bites pair the bar's complete protein and ancestral fat with the slow carbs from dates and the satiety hit from almond butter — keeps you steady through the afternoon without a coffee or a candy-bar shortcut.

    Pulse the Medjool dates in a food processor 20-30 times until they break down into a sticky paste. Scrape the bowl.

    Add the almond butter, Genesee bar chunks, vanilla, cinnamon, and sea salt. Pulse 15-20 times until the mixture forms a thick dough — you want some bar texture left, not a smooth paste.

    Add cacao nibs and shredded coconut. Pulse 5-10 more times just to fold them in evenly.

    Roll into 12 equal-sized balls (~1 tbsp each). If the dough is too sticky, refrigerate the bowl for 10 minutes first.

    Refrigerate the bites for at least 30 minutes before eating — they firm up significantly. Store in an airtight container in the fridge for up to 7 days, or freeze for up to 2 months.

Notes & variations

  • Macros per bite (approx): 145 cal · 5g protein · 12g carbs · 9g fat. One bite is a snack; two is closer to a meal-replacement.
  • Nut-free swap: tahini works in place of almond butter. Different flavor profile, same texture, same role.
  • Make-ahead: this recipe doubles cleanly. Most of our customers batch-prep on Sunday and eat them through Friday — by Saturday they're gone or repurposed as smoothie-bowl topping.
