No-bake energy balls that take 10 minutes to roll and keep in the fridge for a week. One bar blended with oats, nut butter, and dark chocolate chips fuels 12 grab-and-go bites.

Ingredients

  • 1 Genesee Dark Chocolate Almond bar
  • 1 cup rolled oats (certified GF if needed)
  • ¼ cup natural almond butter
  • 2 tbsp raw honey or maple syrup
  • 2 tbsp dark chocolate chips (70%+)
  • 1 tsp vanilla extract
  • Pinch of sea salt

Method

    Finely crumble the bar into a large mixing bowl.

    Add oats, almond butter, honey, chocolate chips, vanilla, and salt.

    Mix with a fork until the mixture clumps when pressed — if too dry, add ½ tsp honey.

    Refrigerate the mixture for 15 minutes so it firms up and is easier to roll.

    Scoop 1-tablespoon portions and roll between palms into balls.

    Place on a parchment-lined plate and refrigerate for at least 30 minutes before eating.

    Store in an airtight container in the fridge for up to 7 days.
