Ingredients

  • ½ Genesee Cinnamon Pecan bar
  • 4 large eggs
  • 2 cups fresh baby spinach
  • 1 tsp olive oil or grass-fed butter
  • 1 medium banana, sliced
  • Flaky sea salt and black pepper
  • Optional: hot sauce

Method

    Heat oil or butter in a non-stick skillet over medium heat.

    Add spinach and a pinch of salt; sauté for 1–2 minutes until just wilted.

    Whisk eggs with salt and pepper, then pour over the spinach.

    Cook low and slow, folding gently until just set and glossy — about 3 minutes.

    Plate scramble alongside sliced banana.

    Set half the bar on the side of the plate.

    Eat 90–120 minutes before the gun — the eggs and bar provide protein, the banana and bar provide fast-and-slow carbs.
