Bison Bar Pre-Race Breakfast
A complete race-morning plate: scrambled eggs with sautéed spinach, a side of sliced banana, and half a Genesee bar alongside. Hits 40g protein and 65g slow-release carbs in under 10 minutes of prep.

Ingredients
- ½ Genesee Cinnamon Pecan bar
- 4 large eggs
- 2 cups fresh baby spinach
- 1 tsp olive oil or grass-fed butter
- 1 medium banana, sliced
- Flaky sea salt and black pepper
- Optional: hot sauce
Method

Heat oil or butter in a non-stick skillet over medium heat.

Add spinach and a pinch of salt; sauté for 1–2 minutes until just wilted.

Whisk eggs with salt and pepper, then pour over the spinach.

Cook low and slow, folding gently until just set and glossy — about 3 minutes.

Plate scramble alongside sliced banana.

Set half the bar on the side of the plate.

Eat 90–120 minutes before the gun — the eggs and bar provide protein, the banana and bar provide fast-and-slow carbs.
