How should protein bars be stored?
Most protein bars keep well at room temperature — between 60°F and 75°F, away from direct sunlight and humidity. Bars made with whole-food fats like bison tallow or nut butter are more sensitive to heat than bars built around sugar alcohols and synthetic binders. Keep them out of a hot car, a sunny windowsill, or a gym bag left in a warm locker. Refrigeration is fine and can extend shelf life, but it's rarely required. Freezing works for long-term storage — just let a frozen bar come to room temperature before eating or the texture will be unpleasant. The single biggest enemy of any real-food bar is heat, because animal fats and nut oils can go rancid faster than refined oils when exposed to prolonged warmth.

What it actually means: room temperature between about 60°F and 75°F, away from direct sun, moisture, and heat sources. Mainstream commercial protein bars often use preservatives, sugar alcohols, and heavily processed binders specifically to extend ambient shelf life. If you're reading a bar that stays perfectly soft at 90°F for 12 months, there's usually a reason for that. It's not a knock on those bars necessarily, but it's worth knowing what's doing the preservation work.
