Why this works

Most overnight-oats recipes lean on protein powder for the macros, which is fine until you taste them in the morning. Crumbling a Genesee bar in instead gives you a complete amino profile + ancestral fat + real cinnamon-toffee flavor that holds up overnight in milk. Make it Sunday for the whole week.

Ingredients

  • 1/2 cup rolled oats (not quick or steel-cut)
  • 3/4 cup whole milk (or grass-fed)
  • 1 Genesee Snickerdoodle bar (crumbled)
  • 1 tbsp chia seeds
  • 1 tsp raw honey or pure maple syrup
  • 1/4 tsp ground cinnamon
  • Pinch of sea salt
  • Optional toppings: sliced banana, chopped nuts, more honey

Method

    Combine rolled oats, milk, chia seeds, honey, cinnamon, and salt in a 12-16oz mason jar or glass container. Stir well.

    Crumble the Genesee Snickerdoodle bar into the jar, breaking into roughly pea-sized pieces. Stir gently — you want pieces distributed, not pulverized.

    Cover and refrigerate at least 6 hours, ideally overnight. The oats hydrate and the bar partially dissolves into the milk, leaving a few chewy chunks for texture.

    In the morning: stir to redistribute, taste, and adjust honey if you want it sweeter. Top with sliced banana, chopped nuts, or a final drizzle of honey if you have 30 extra seconds.

    Eat cold straight from the jar, or warm in a microwave for 60 seconds if cold-oats aren't your thing. Either works.

Notes & variations

  • Macros (approx): 520 cal · 28g protein · 56g carbs · 18g fat. The chia seeds add ~5g of plant protein and a satiety hit; skip them if you prefer thinner oats.
  • Batch-prep: this recipe scales 5x cleanly into one quart-sized container — make Sunday night, eat Monday-Friday breakfast. Add fresh toppings each morning so they don't soften.
  • Bar swap: White Chocolate Toffee works (more dessert-feel) but Coffee Latte doesn't — the cold-brew flavor turns muddy in milk overnight. Stick to Snickerdoodle or White Chocolate Toffee.
