Will Carr played NJCAA basketball before injuries ended his career. Like every athlete on every JUCO bus he was living on protein bars he couldn't actually finish — sweet wallpaper that sat in his gut like gravel and had ingredient labels he'd never cook with. Two years of label-reading, ingredient-sourcing, and a stubborn return to ancestral fats produced the bar Genesee ships today: 21g of milk + egg-white protein on a base of grass-finished bison tallow, three flavors that taste like food, no seed oils, no soy isolate.
