You read labels. We do too. Below: where every ingredient in a Genesee bar is sourced, the current per-flavor label posture, and our third-party testing posture. Where we're not yet at full traceability we'll say so — the trust comes from being honest about the gap, not from pretending the wall is built.

Sourcing
Current ingredients, with label-level guardrails.
Bison tallow
Grass- and forage-finished bison from American plains ranches. We work with a small set of producers who finish on range, not on grain. The fat is rendered slowly and shipped to our co-packer in 30-pound blocks — no industrial deodorization, no hydrogenation, no blending with seed oils.
Whey protein isolate + collagen
Current bars use whey protein isolate and collagen for the 21g protein stack. Whey means the bars contain milk; the current label controls the exact supplier and lot-level detail until founder-reviewed source cards are posted.
Peanut butter, honey, flavor accents
Current bars contain organic peanut butter and raw honey. Flavor-specific inclusions such as coffee, chocolate, white-chocolate/toffee, or cinnamon notes are governed by the current package label before we post a founder-reviewed full supplier map.

All current Genesee bars contain milk and peanuts. Cross-contact: production may also occur in facilities that handle tree nuts, soy, and wheat. Production lines are cleaned between runs but we do not certify allergen-free.
Testing
What we test, what we don't.
Every batch: microbial panel (yeast, mold, salmonella, E. coli, Listeria) at our co-packer's in-house lab before any pallet ships. No exceptions.
Quarterly: third-party nutritional panel (macros, micronutrients, fatty-acid profile) on a sample from each flavor at an ISO-certified lab. We post certificates to this page as they come in; the first external panel runs Q3 2026.
Banned substances: all ingredients are sourced from suppliers with their own COAs covering NSF / Informed Sport-style banned-substance lists. Genesee doesn't carry a Genesee-specific NSF certification yet — it's on the 2026 roadmap. Until then, the ingredient deck is the certification.
What we don't test: we don't currently run a heavy-metals panel on every batch (the grass-fed bison tallow + whey/collagen supply chain doesn't carry the soil-uptake risk that drives most heavy-metals concerns in plant-protein bars). We're evaluating annual heavy-metals testing for the brand audit; we'll surface results here.

First quarterly panel runs Q3 2026.
