You read labels. We do too. Below: where every ingredient in a Genesee bar is sourced, the full per-flavor breakdown, and our third-party testing posture. Where we're not yet at full traceability we'll say so — the trust comes from being honest about the gap, not from pretending the wall is built.

Sourcing
Every ingredient, where it comes from.
Bison tallow
Grass- and forage-finished bison from American plains ranches. We work with a small set of producers who finish on range, not on grain. The fat is rendered slowly and shipped to our co-packer in 30-pound blocks — no industrial deodorization, no hydrogenation, no blending with seed oils.
Milk protein
Milk protein concentrate from US dairies. We're scaling toward grass-fed-only sourcing in 2026; current supply is conventional dairy with no rBST. The protein is concentrated through ultrafiltration — no acid wash, no chemical extraction.
Egg-white protein
US-sourced cage-free egg-white protein. Pasteurized via gentle low-temperature processing to preserve protein structure. We're tracking pasture-raised options for a 2026 SKU upgrade.
Cocoa butter, vanilla, honey
Honey is US-sourced, single-origin where the volume supports it. Cocoa butter is fair-trade certified (West Africa origin); we're evaluating Latin American single-estate sources for a 2026 reformulation. Vanilla extract is Madagascar bourbon, bottled in the US.

Cross-contact: All flavors are produced in a facility that also handles peanuts, tree nuts, soy, and wheat. Production lines are cleaned between runs but we don't certify allergen-free.
Testing
What we test, what we don't.
Every batch: microbial panel (yeast, mold, salmonella, E. coli, Listeria) at our co-packer's in-house lab before any pallet ships. No exceptions.
Quarterly: third-party nutritional panel (macros, micronutrients, fatty-acid profile) on a sample from each flavor at an ISO-certified lab. We post certificates to this page as they come in; the first external panel runs Q3 2026.
Banned substances: all ingredients are sourced from suppliers with their own COAs covering NSF / Informed Sport-style banned-substance lists. Genesee doesn't carry a Genesee-specific NSF certification yet — it's on the 2026 roadmap. Until then, the ingredient deck is the certification.
What we don't test: we don't currently run a heavy-metals panel on every batch (the grass-finished bison tallow + dairy + egg supply chain doesn't carry the soil-uptake risk that drives most heavy-metals concerns in plant-protein bars). We're evaluating annual heavy-metals testing for the brand audit; we'll surface results here.
